Graduation cupcakes are the perfect dessert for guests at a party because they make a beautiful display and can be easily served. These cupcakes can be adapted to school colors with food coloring.
Graduation Cupcakes Recipe
1 package white cake mix
1 1/4 cups water
3 egg whites
1/3 cup vegetable oil
Food coloring in school colors
1 container of white frosting (16 ounces)
22 chocolate squares
22 mini candy coated chocolate pieces
Gummy candy strips
Heat over to 325 degrees. Line 22 paper baking cups (2 1/2″) in muffin pan.
Beat Cake mix, water, egg whites and oil with electric mixer on low for 30 seconds. Beat at medium 2 minutes till blended well.
Now the fun begins. Tint batter with appropriate food coloring for your school, just a few drops at a time till desired color. Drop batter evenly into muffin cups.
Bake 20 minutes till toothpick inserted into centers comes out clean. Then cool on wire rack.
Tint the frosting with the other school color.
Frost the cupcakes. Place a chocolate square on top of each cupcake. Place a small dap of frosting in the center of the square and attach the candy strips for the tassel and the chocolate piece for the button.
