Pink Lemonade Whoopie Pies

Whoopie Pies or Sandwich Cookie are made simple with this recipe that uses a white cake mix along with a pink lemonade mix.  Baking time is only 12 minutes, so whip up a batch for all to enjoy.

Makes 10-12 pies


1 package white cake mix (15 ounces)

1/2 Cup Water

1/3 Cup Vegetable Oil

6 Tablespoons pink Lemonade Mix divided

1 egg

1 1/2 teaspoons grated lemon peel

Pink Sprinkles

2 Tablespoons lemon juice

2 sticks Butter, softened

3 Cups powdered sugar

Pink food color


Whoopie Pie Instructions:

Preheat oven to 350 degrees.  Line 2 cookie sheets with parchment paper.

Combine in a bowl the cake mix, water, oil, 3 TBS lemonade mix, egg, and lemon peel.  Stir with a wooden spoon till blended.  Drop batter by tablespoons onto cookie sheet about 2 inches apart.

Bake 12 minutes or till set.  Cool on cookie sheets for 5 minutes and move to wire rack to finish cooling completely.

Combine remaining 3 tablespoons of lemonade mix and lemon juice in large bowl and mix well.  Add butter, beat on medium-high speed till creamy consistency.  Add powdered sugar and pink food color if desired.  Beat till light and fluffy.

Spread filling on the flat sides of half of the cookies.   Top with remaining cookies.
