Work Cold Bake Hot is a bakers mantra, but they know that working with chilled  dough creates the flakiest piecrusts and the most successful pies..  Sometimes this may be difficult to put into the process especially on warm days.  So, the solution is to put all of your baking tools and pre-measured ingredients into the refrigerator for at least 30 minutes before making the pie dough.  This includes beaters, utensils, bowls, flour, butter, salt, everything.  The easiest way is to put them all on a sheet pan for easy transport and slide the pan into the refrigerator.
